Aamer Mishti Achar (আমের মিষ্টি আচার)


There were times when children would run to the mango trees during Kalboishakhi or nor’wester with bags or wicker baskets in hand. The storm would make little unripe mangoes fall from the trees, and the little humans would collect them to bring home. Now, those mangoes are handed over to the women at home. Maa-Thakuma would make a variety of pickles from those. One that will be in our memories forever among them is Aamer Mishti Achar.

How to store

Big white glass containers were used earlier to store pickles like this. A small piece of white cloth used to be tied on the neck. The containers were then kept in the store room or kitchen. You can do the same if you have that much space. Otherwise, keep them refrigerated to save the Achar from fungus development and spoilage.

 

What goes into it?

Raw mangoes are the chief ingredient. Granulated sugar or Aakher Gur can add the desired sweetness to make it mishti. The common spices include panch phoron, bay leaves, shukno lonka, etc. The phoron in heated mustard oil gives the pickle a hint of spicy flavour. A small baati of Aamer Mishti Achar from Polli Gram will take only a few minutes to be gobbled up.
