Akher Gur/ Ekho Gur (আখের গুড়/ এখো গুড়)
Akh, or sugarcane, is India’s principal source of sugar or sugar items. But in Bengali food culture, sugarcane juice is further elevated to turn it into Akher Gur or Ekho Gur. The sugarcane juice is further boiled and reduced over a high flame till it reaches a thick and semi-solid consistency. The water evaporates, leaving behind the solid sweetener.
