Homemade Nimki (ঘরে বানানো নিমকি)


Bijoya, the time after the immersion of the goddess Durga, and Nimki are synonymous in Bengali homes. Women used to prepare various homemade snack items for everyone who would visit. The Nimki was not only for special occasions. They stored it for long. Sometimes, the nimki-s are very small. These are Kucho Nimki. Some are bigger than that and shaped like a barfi. There was, and still is, another variety of Nimki. A triangular Nimki in the box from the local sweet shop beside two to three sweets. One of them would be a Laddoo, a white sondesh, and, most likely, a pantua- does this box seem familiar? You would get one such box every time you performed in the parar programme. Among all the sweets in the paper box drenched in sugary syrup, Nimki would appear as the hero. Crunchy Nimki-s, when homemade, serves as the best snack, especially with tea or coffee during an evening adda.

How we make it

Homemade Nimki from Polli Gram contains the best quality wheat flour. We add a few spices like Ajwain, Kala Jeera, etc., to bring a hint of spicy aroma. Otherwise, it would taste bland. A handful of these Nimki-s with a little Chaat Masala spread on top and dipped in the pulpy Tetul Achar will taste amazing.
